Springs Pinot Grigio 2007

The 1880s was a time of change
for the Springs district. The
railway branch line from Ballarat
was opened; the first vineyard
was planted and the town of
Springs had its name
changed to Waubra.
Keeping with the tradition of
change Quoin Hill's Pinot Grigio
is the first of this variety produced in
the Waubra district and the result is a
wine of unique and abundant flavour.
The grapes are hand picked at an
elevation of 520 metres.

Springs Pinot Grigio’07

This Pyrenees Pinot Grigio (also known as Pinot Gris) has characters of stone fruit and lychees, slightly floral overtones with a crisp, dry finish. A big fruit driven wine. (There is no oak used in this variety.)

Pinot Grigio was selected on the recommendation of Trevor Mast from Langi Ghiran who could see the variety becoming ‘the new chardonnay’.

" While the Pyrenees is famed for it’s classic varieties, some producers are experimenting with other grapes. Quoin Hill Vineyard makes a delicious pinot grigio and small quantities of tempranillo."

The Gap Chardonnay 2005

Beneath the Pyrenees Ranges the road to Avoca passes between Quoin Hill and Big Hill. It is known to the locals as The Gap and is the inspiration for this unique Victorian Chardonnay. Hand picked at an elevation of 520 metres from its bed of rich volcanic soil, The Gap has been patiently matured in fine French Oak. The result is a chardonnay that is of exceptional quality.

The Gap Chardonnay’05
This Pyrenees Chardonnay was lightly oaked in French Barriques for 12 months, it has citrus aromas, good mouth fill, with slight butterscotch characters and silky texture. A very easy drinking Chardonnay.

Schulze N.V. Brut

Charles Schulze was born in 1826 in Saxony, Germany. He was one: of the first settlers to Springs (now Waubra) in the late 1850s, - and soon discovered the terroir of Springs to be perfect for growing wine grapes.

Schulze N.V. Brut is dedicated to this visionary pioneer who played a leading role in the development of the community.
